Tasting Notes The Danilo Rosé is produced in a light style with lower alcohol and is made to enjoy in spring and summertime.
Vineyards Merlot Grapes are form our own vineyards grown on Yonder Hill. The Grenache is bought in from Vriesenhof. Both varieties were picked with low sugar to keep the alcohol low and retain freshness.
In the Cellar Skin contact was less than one hour and free-run juice was used to give the colour. The wine was cold fermented and bottled early to maintain the fruity flavours.

Tasting Notes The wine was made in a reductive style to retain the fresh; fruity flavours of the grapes. It was kept on the fine lees for 4 months for complexity and balance.
Vineyards To obtain a certain style of wine for our new Sauvignon Blanc, we selected a specific vineyard in Stellenbosch that produced more tropical flavours and less green aromas. The vines are 18 years old and the canopy was opened to give more thiols and fewer pyrazines. The yield was restricted to 8ton/ha.
In the Cellar It was kept on the fine lees for 4 months for complexity and balance.

The wine is well balanced and ready to enjoy with food, but will mature well in the bottle. Merlot normally loves meat and lamb and also pairs very well with tomato dishes.
